We do recommend to let this particular coffee to stabilize at least 14 days after roasting. From our experience it just starts to perform 20 days after roasting and will reach it best 1 month plus.

El Paraiso lot 3 is a coffee that can cheer up any grey rainy day out here and beyond. (Believe us we do know what we are talking when Hamburgs pulls in average about 190 days a year with more than 0,1mm of rainfall ).
This season we're happy to get El Paraiso lot 3 back in stock. Our main stimulus to source it again and again is its distinguish straight forward strawberry flavor that can not be misperceived. Its aroma, flavor and aftertaste are outstanding, while it also gets high score for sweetness, uniformity, body, balance & acidity, what makes this coffee superior while comfortable.
Castillo varietal is responsible for high acidity with well pronounced citrus notes and hint of florals which are reminiscent of fresh grapefruit juice, but also bunch of tropical fruits where we chosen to go for mangosteen & osmanthus blossoms in descriptors. Double anaerobic process contributes into mellowing & marring flavors all profile through while giving it a lactic direction.
Diego Samuel Bermudez Tapia surely mastered modulation of cup flavors depending on pH, culture media, microorganisms and temperature, made serious experimentation with fermentation by non-traditional methods and over last few years El Paraiso sold lots of coffee at a record price at the auctions and gained a history of prominent places all over the competitions.
Diego Samuel’s family, his wife, two daughters and two brothers, is devoted to coffee, and together they work to continue evolving in production.
